Rhubarb Crumble:

John and I just love this. We would have it every day if waistlines allowed!

For the crumble:

Use a food processor, make double and freeze it.

150g plain flour

25g rolled oats (the healthy bit of the recipe)

110g butter

50g of demerara and 50g of castor sugar

Mix butter and flour together then add the other ingredients.


Add a little grated nutmeg to the rhubarb.

Add the crumble to the cooked rhubarb.

Serve it at the fire in front of the telly watching 'Dancing with the Stars'!!


Almond Cake - Gluten Free

7oz flaked almonds

7os castor sugar

2 eggs

10" round tin greased.

Put almonds and sugar into food processor and whizz till gritty.

Add eggs and that's it!

Bae for 20 to 25 minutes at 180.

Serve with cream and fresh berries OR melted chocolate

8 oz flour

3 oz butter 3 oz castor sugar

1/4 teaspoon baking powder

3 oz sultanas 1 oz mixed peel

1 egg and a little milk

Sift flour, rub in butter, add sugar, baking powder, fruit & peel.

Pour in beaten egg keep back a small bit to glaze buns, add enough milk to moisten mixture.

Place in oven at 180 degrees for 20/25 minutes.

Whiskey Boiled Fruit Cake:

125g Butter

1 cup of suger and 1 cup of milk

600g mixed fruit

1 tsp mixed spice, half tsp of cinnamon

1/4 tsp of nutmeg (1st 7 ingredients)

1/4 cup of whiskey

1 scant tsp of bicarbonate of soda

2 eggs beaten

1 cup of plain flour and 1 cup of self-raising flour (use gluten free flours if needed)

1/4 cup of crushed walnuts.

Put 1st 7 ingedients into a saucepan and bring to boil, cover then simmer fo 5 minutes.

Cool slightly and add Whiskey and bicarbonate. Cool completely and add eggs, flours and spoon into 8" greased tin.

Cook at 180c for approx an hour. Pour extra whiskey over it (a quarter of a cup)

P.S. you can use any spirit!
